Duke Dining COVID-19 Update
To our Duke Dining community,
Now and always, the safety of Duke’s students, guests, and employees is our number-one priority. We are working directly with Duke’s COVID-19 response teams to closely monitor the situation and take proactive steps to protect the health and safety of our community.
In addition to our existing stringent health and safety protocols, we are taking extra precautions to ensure we’re doing everything we can to keep our community safe.
In Duke Dining operations, we always:
- Require all employees to report any illness before reporting to their food-service shift
- Employ regular and strict cleaning protocols in all food preparation and cooking areas
- Employ rigorous procedures around cleaning and sanitation of all guest-contact surfaces
- Supply sanitizer for employees and guests
- Require all staff to be certified in stringent food safety training programs
- Mobile Ordering available for pick-up at The Loop to assist with ease of ordering. We are working on providing additional locations for this service. Mobile Ordering information can be found here.
We are taking additional precautions, including:
- Extra training sessions on avoiding potential exposure, hand washing and reviewing the sick employee policy
- Mandate hand-washing every 20 minutes and between tasks
- Transitioned to all to-go ware to reduce potential exposure
- Removed all self-service options
- Encouraging social distancing by offering a take-out option, only.
- Established an internal task force to monitor and provide guidance in real time
- Providing care meals to students in required isolation

Dynamite Dining Devil
This week’s “Dynamite Dining Devil” is Julia Anderson, Food Service Worker II, at Marketplace! Julia was nominated for always having a positive attitude, being a team player and always putting the team first! She consistently greets everyone that enters Marketplace with a smile and a cheerful “hello,” asks our guests how they are doing, and is always ready to help the management team with whatever they might need. She leads team members in prayer when requested and helps her co-workers with various tasks. Julia is a hard worker, dedicating countless hours to Marketplace and Trinity Café and always does so with much enthusiasm. We are so fortunate to have her on our team. Congratulations to Julia!
About Julia: Julia has worked at Duke since September of 1984. She feels that Duke is a wonderful place to meet a diverse group of people, including students and staff. She has learned so much and has tried new things, including foods new to her such as broccoli!
When she’s not at work, she likes to spend time with her grandchildren, Logan and Nia. She likes to read mysteries and watch the Hallmark channel. She is active member of her church, serves as a deacon, leads the hospitality team, and serves on the dance team and on the Usher Board.
The Dynamite Dining Devil program features a Duke Dining employee each week for going above and beyond in the workplace.
Women's History Month Themed Dinner
In honor of National Women's History Month the Marketplace team has created a menu that includes a collection of recipes from a variety of women's suffrage cookbooks. The cookbooks were created as both a fundraising and political tool, but also provided a powerful voice communicating to women not only about food and the ideals of home and family life, but also about women's right to vote.

Pop-Up Cooking Classes
Cooking classes are back, virtual-style, with Caroline Bretherton, international author, instructor, and culinarian. Watch on the Duke Dining IGTV channel (Instagram @dukedining) as Caroline shows us how to create the following:
- February 10th: Truffles for Valentine's Day (video here)
- March 10th: Turkey Koftes and Homemade Flat Bread
- April 21st: Earth Day Menu: Vegan Sweet Potato and Spinach Coconut Curry and Rice
Color Your Plate
Consider colors, not calories!
Nutrition is about more than calories in and calories out. Good nutrition requires balance, adequacy, moderation, and variety when it comes to eating.
By highlighting the health benefits of a colorful plate, Duke Dining and Nutrition Services want to help you take another step closer to good nutrition with the Color Your Plate program. Just look for the “Color Your Plate” logo when dining at Marketplace (East Campus) and Sprout (Brodhead Center) to identify fall-colored foods that will help you add more color to your plate! And on Tuesdays through 4/27 stop by Marketplace and Sprout for a free colorful, healthy treat! (while supplies last)!
Duke Dine-Out Mobile Ordering
Duke Dine-Out Mobile Ordering is available for pick-up at Cafe, The Loop, Il Forno, Sazón, Ginger + Soy, Gyotaku, JB's Roasts & Chops, Beyu Blue, Freeman Center, Au Bon Pain, The Skillet, Bella Union, Panda Express, McDonald's, Trinity Café, The Farmstead, Sprout, and Thrive Kitchen and Catering for on campus residents only. (Thrive Kitchen and Catering can be accessed by both on and off campus residents at the Express Pick-Up location on the Au Bon Pain patio).
Express Pick-Up, from a centralized location, and delivery is available for on and off campus residents. (participating locations, only).
We are working on providing additional locations for this service.
